C&K HEALTHY MOCHA MOUSSE
Coffeeholics, chocoholics, and sweet teeth rejoice: the ultimate all-in-one dessert is here. Creamy, dreamy, AND full of protein... we bring you the most decadent MOCHA MOUSSE, full of coffee and chocolaty flavors but also vegan, dairy free, gluten free, egg free, low sugar... and THIQQQ. Super easy, super quick to make, and super delicious. It's the perfect dessert.
MACROS: 200 calories | 9g carbs, 14.5g fats, 13g protein
INGREDIENTS (5 servings)
📍 2 scoops Clearly Collagen (optional but included in macros)
📍 2 shots C&K espresso (we recommend Night Train or Roaster Dave's Blend)
📍 1 14-oz container of extra firm tofu
📍 1/2 cup lite canned coconut milk
📍 1 Lily's dark chocolate baking bar (or 4 oz dark chocolate of choice)
📍 1 tbsp dutch processed cocoa powder
📍 3/4 cup powdered erythritol/powdered sweetener of choice
📍 1 tsp vanilla extract
📍 1/4 tsp salt
STEP 1: Drain your tofu and squish out as much water as possible with paper towels. This is super important for the thickest mousse possible!
STEP 2: Puree your tofu, coconut milk, vanilla extract, powdered sweetener, collagen, and salt in a high-speed blender until it's perfectly smooth.
STEP 3: Add your coffee, MELTED chocolate, and cocoa powder to blender and mix in completely.
STEP 4: Pour your mixture into serving cups and leave in fridge overnight to set! FYI, our portions were ~150g each.
