C&K Hot Chocolate Cookies

Nothing says the holidays like some holiday baking. And these hot chocolate cookies should definitely be on your nice list. They're super rich, gooey and decadent--plus, dairy free and refined sugar free. This recipe is also really easy to make vegan if you need to! Check out below for the how-to.

MACROS: 70 cal | 7g carbs, 4g fats, 1g protein

INGREDIENTS (serves 12)

📍 1/4 cup butter (use vegan butter for vegan cookies)
📍 1/4 cup all purpose flour (feel free to experiment with alternative flours)
📍 1/4 cup brown coconut sugar
📍 1/4 cup monkfruit sweetener (feel free to use any granulated sugar replacement)
📍 1/4 cup Dutch processed cocoa powder
📍 1 scoop Vanilla Clearly Caffeine
📍 3 tbsp non-dairy milk (we used almond milk)
📍 1/4 tsp baking soda
📍 1/8 tsp salt
📍 Marshmallows and chocolate chips to taste (not included in macros)

DIRECTIONS

STEP 1: Cream together your butter, monkfruit sweetener, coconut sugar and Clearly Caffeine.

STEP 2: Mix in your milk. Don't worry if it doesn't completely absorb.

STEP 3: Mix in your dry ingredients followed by chocolate chips and marshmallows.

STEP 4: Make ~1.5 tbsp sized cookie dough balls and top with a marshmallow or two for fun. When they come out of the oven, tap the pan on the counter to de-puff the cookies as they'll be airy, and then set aside to cool.
