INGREDIENTS (makes 4)
๐ 3/4 cups long-grain white rice
๐ 4 scoops Clearly Collagen
๐ 1/2 cup almonds
๐ 3 cinnamon sticks
๐ 4 shots C&K espresso (we recommend Thunderbolt)
๐ 1/4 cup monk fruit OR 3 tbsp honey
๐ Pinch of salt
๐ 1/4 tsp vanilla extract
๐ 3 tbsp heavy cream or milk of choice (optional, not included in macros)
DIRECTIONS
STEP 1: Make your horchata! Blend together your rice, almonds and cinnamon sticks. Add 2 cups of water and blend again. Then refrigerate for 6-12 hours.
STEP 2: Strain your horchata through a double layer of cheesecloth into a bowl. Whisk in your monk fruit/honey, salt, vanilla extract, and any cream or milk if you're using it.
STEP 3: Fill an 8 oz glass with ice and pour in your shot of espresso. Top with your horchata and enjoy!
