C&K Keto Tiramisu Chia Pudding


Dessert for breakfast. It's a big mood. But with none of the carbs and none of the blood sugar spikes. This stuff is sugar free, CREAMY, insanely delicious and is topped with a tiramisu layer that's worth the effort. There are a few steps to this recipe, but they're all actually super easy. Check it out.

INGREDIENTS (5 servings)


📍 1 scoop Clearly Collagen (optional)
📍 1 shot C&K espresso of choice (we used Coffee of the Month)
📍 1 cup warm unsweetened almond milk (or other nut milk of choice)
📍 2.5 tbsp cocoa powder (dutch processed recommended)
📍 1/4 cup powdered erythritol or truvia
📍 4 tbsp chia seeds
📍 1/2 tsp vanilla extract


📍 1 scoop Clearly Collagen (optional)
📍 1/2 warm unsweetened almond milk
📍 2 tbsp powdered erythritol or truvia
📍 1/2 tsp vanilla extract
📍 3 tbsp chia seeds
📍 3 tbsp whipped coconut cream


📍 2 large egg yolks
📍 4 tbsp mascarpone cheese (or coconut cream to be dairy free)
📍 1/4 cup powdered erythritol or truvia
📍 1 cup coconut cream
📍 1/2 tsp vanilla extract
📍 1/2 tsp rum extract

STEP 1: Make the chocolate coffee layer by mixing together all ingredients except the chia seeds. Once they're mixed, add in the chia seeds and let it sit 15 minutes or so to thicken.

STEP 2: Make the vanilla cream layer by mixing together your almond milk, sweetener and vanilla. Once they're mixed, add in the chia seeds and let it sit 15 minutes or so to thicken. Fold in 3 tbsp of whipped coconut cream.

STEP 3: To make the tiramisu layer, mix together all ingredients in a heat-resistant bowl until it's pale and creamy.

STEP 4: Double-boil your tiramisu mix by placing the bowl on top of a pan with simmering water, cooking 5 minutes or so, stirring constantly, until it's lighter and a little frothy.

STEP 5: Transfer bowl to freezer to cool. Once it's cool, bring it out and whip it until it's super thick and creamy.

STEP 6: Assemble!! Divide your chocolate layer between 5 jars, then vanilla, then top it off with your to-die-for tiramisu cream. Dust with cocoa powder and (optional) chocolate shavings and you're set!
