C&K LOW CARB LEMON BARS
Refined-sugar free, keto friendly and grain free: the bright, fresh, dense lemon bars you've been craving with none of the sugar-induced crash and (heart)burn--and you won't believe how easy they are to make. It's true. Here's how.
MACROS: 260 cal | 5g carbs, 20g fats, 15g protein
📍 1/2 cup butter
📍 1 3/4 cup almond flour
📍 6 scoops Clearly Collagen
📍 3 eggs
📍 3 egg whites
📍 1 1/2 cup powdered erythritol
📍 3 lemons
📍 1/4 tsp almond extract & 1/4 tsp vanilla extract (optional for crust)
📍 pinch of salt
STEP 1: Mix butter, 1 cup almond flour, 1/4 cup erythritol, 3 scoops Clearly Collagen, almond extract, vanilla extract and a pinch of salt together and press the batter evenly into an 8x8" pan lined with parchment paper. Bake your "crust" for ~20 mins at 350 degrees and set aside to cool for at least 10 minutes.
STEP 2: In a new bowl, zest one or two lemons and juice all 3. Add the eggs, egg whites, 3 scoops Clearly Collagen, 3/4 cup almond flour, and 1 1/4 cup erythritol.
STEP 3: Pour your lemony batter over your cooled crust and bake it for another 25-30 mins depending on your oven. Test the center to make sure a toothpick comes out clean.
And you're done! The hardest part is waiting. They're best cool, so if you can muster the strength to give them 30 mins cool time after they're done baking, you'll be even better off.
