C&K No-Bake Carrot Cake Bars


If you're a decent human you probably like carrot cake (without raisins). Here it is, in bar form, but healthy. Ooey, gooey, oo-ah worthy--and EASY TO MAKE. No bake. No muss, no fuss. They're LOADED with frosting, grain free, gluten free, keto friendly, and refined sugar free to boot. And you've gotta try them. 🥕

MACROS per bar: 345 calories | 14g carbs, 29g fats, 10g protein

INGREDIENTS (9 servings)

📍 1 scoop Clearly Collagen
📍 1 scoop Vanilla Clearly Caffeine
📍 10 medjool dates
📍 8 oz low fat cream cheese or neufchatel cheese
📍 5 tbsp sugar free maple syrup
📍 1 cup raw almonds
📍 1 cup walnuts
📍 2 tbsp coconut oil
📍 1/2 tsp cinnamon
📍 1/2 cup shredded carrot
📍 1.5 tsp vanilla extract
📍 pinch of salt

STEP 1: Blitz nuts, dates, carrots, coconut oil, collagen, caffeine, 1/4 tsp cinnamon and salt in your food processor until it's a fine crumb (will be sticky).

STEP 2: Press into the bottom of a lined 8x8" pan and pop in the fridge to chill.

STEP 3: Beat together cream cheese, 1/4 tsp cinnamon, maple syrup and vanilla.

STEP 4: Spread your frosting on the base and set in the fridge to set at least 30 minutes.
