C&K No-Bake Pumpkin Energy Bites

CAKEY, SUGAR FREE, and HEALTHY? Here are your grab-and-go instant energy bites: the perfect fall-time morning snack for you guys out there that chronically skip breakfast because you choose sleep over food. They're gluten free, low fat, AND pack a bit of a caffeine punch as an added benefit. But best of all, they're extra easy to make. Ready?
MACROS per bite: 85 calories | 11g carbs, 3g fats, 3g protein
INGREDIENTS (~15 servings)
📍 1+ scoops Clearly Collagen (use extra for more protein, it won't affect the consistency)
📍 2 scoops Vanilla Clearly Caffeine
📍 1 3/4 cups oat flour
📍 4 tbsp almond butter (or nut butter of choice)
📍 1/4 cup rolled oats
📍 120g pumpkin (+ extra if your dough is too dry; add 1 tbsp at a time as needed)
📍 1/4 cup sugar free maple syrup
📍 1 tbsp pumpkin pie spice
📍 Vanilla extract to taste
STEP 1: Mix together your oat flour, oats, collagen, caffeine, vanilla extract and pumpkin pie spice.
STEP 2: Add in your almond butter, maple syrup, and pumpkin puree. We recommend just getting in there with your hands. You'll wanna ditch the spatula...
STEP 3: Roll out your energy bites ~2 inch diameter each.
STEP 4: Coat in your topping of choice and enjoy! We used Halloween marshmallow sprinkles (lol). Also great with shredded coconut, cocoa nibs, or crushed nuts. Pick your poison.
