C&K Paleo Maple Pecan Cookies

These maple pecan cookies are gooey enough to be muffins. The combo of vanilla and maple flavors on these is really outstanding, but the texture is what will get you addicted. These are keto friendly, refined sugar free, FAT BOMBS. If you love the flavor of maple, you NEED to make these soft, chewy, mapley cookies--and you won't believe how easy they are.

MACROS per cookie (serves 12): 225 calories | 8g carbs, 20g fats, 5g protein

INGREDIENTS:

📍 1 1/4 cups almond flour
📍 1/4 cups coconut flour
📍 1 scoop Vanilla Clearly Caffeine
📍 2 room temp eggs
📍 1/4 cup butter/ghee
📍 1/4 cup coconut oil
📍 1/4 cup coconut sugar
📍 1/4 cup maple syrup (we used sugar free)
📍 1 tsp vanilla extract
📍 1 tsp baking soda
📍 1 cup chopped pecans

For an optional (and amazing) maple glaze, mix together 2 tbsp coconut oil and 2 tbsp maple syrup to add on top after the cookies have cooled.

DIRECTIONS:

STEP 1: Mix together your butter/ghee, coconut oil, and coconut sugar. Once they're mixed, add everything else, folding in your pecans last.

STEP 2: Refrigerate your dough for 20 minutes so it has a better consistency for baking.

STEP 3: Preheat your oven to 350 degrees and line your baking sheet with parchment paper (these guys are OILY--you'll want it lined). The macros are set up for 12 cookies, but if you want smaller cookies feel free.

STEP 4: Bake for 10 minutes and at that point pop open your oven to squish the center of each cookie with your thumb until it's about 1/2" thick. Then bake it for another 5 mins.

STEP 5: After your cookies have cooled, feel free to dress them up with that tasty maple glaze!! It really adds a ton of flavor.
