C&K MICROWAVE MUG MONKEY BREAD

MACROS : 410 calories | 44g carbs, 3g fats, 15g protein
INGREDIENTS
For "date paste":
๐ 1/2 cup C&K coffee blend of choice
๐ 10 medjool dates
For dough:
๐ 1 scoop Clearly Collagen
๐ 1/3 cup oat flour
๐ 1/4 cup date paste (above)
๐ 2 tbsp tapioca starch
๐ 1/2 tsp baking powder
๐ 1 tsp vanilla extract
๐ Pinch of salt
For cinnamon goo:
๐ 1/4 cup date paste (above)
๐ 1 tsp brown coconut sugar
๐ 2 tsp cinnamon
DIRECTIONS
STEP 1: Brew your coffee and blend together with dates to make "date paste."
STEP 2: Mix together dough ingredients til you have a sticky, consolidated dough.
STEP 3: Pinch off dough pieces and roll into ~1" diameter balls (we got 7 balls out of our batch).
STEP 4: Drop each ball in your cinnamon goo and coat thoroughly before transporting it to your mug. Repeat for all balls.
STEP 5: Microwave for 1 minute on high. Top with remaining goo and a sprinkle of cinnamon, and BOOM! Done!
