Gluten Free Coffee & Almond Brownies

These brownies are seriously good. Think coffee-meets-death-by-chocolate good. If you've never had a coffee brownie, you're about to have your taste buds blown.

MACROS per brownie: 186 cal | 17g carbs, 13g fats, 5g protein

INGREDIENTS (makes 9 brownies):
📍 1 cup almond flour
📍 1/4 cup unsweetened cocoa powder
📍 1/4 cup coffee, brewed
📍 1/2 cup sugar
📍 1 egg
📍 2 tbsp coconut oil OR butter
📍 1 tsp vanilla extract
📍 1 tsp baking powder
📍 1/8 tsp salt
📍 1/4 cup chocolate chips
📍 1/4 cup chopped almonds (or other nut, or no nuts--go nuts)

DIRECTIONS:

Preheat oven to 350F.

STEP 1: Cream together butter/coconut oil and sugar in a large bowl (this will be the bowl EVERYTHING gets mixed in, so plan accordingly. Nothing worse than underestimating bowl size). Then mix in egg, coffee and vanilla. It will be liquidy.



STEP 2: In a different bowl (this one can even be smaller) combine your almond flour, cocoa powder, salt and baking powder.



STEP 3: Mix dry into wet JUST until mixed (do not over-mix), and stir in your chocolate chips and almonds/nuts of choice.

STEP 4: Coat your 8"x8" brownie pan with nonstick spray because these suckers STICK. We lined ours with wax paper and they still stuck to the paper, so spray even if you do line the pan.

STEP 5: Pour your batter into the pan and spread evenly. Top with more chocolate chips and/or nuts at your discretion. We recommend a generous sprinkle. Bake for 30-35 minutes (we did 30, but cooking time will vary based on your oven).

STEP 6: Let your brownies cool before you slice them if you're looking for "pretty" slices. We were impatient. We dug right in. You will probably want to, also. They're VERY good.
