The BEST paleo coffee cake, dense, fluffy, swirled with cinnamon and pecans, infused with coffee flavor, and HEALTHY. It must be a dream. It's not, but it IS a coffee cake you'll dream about. Try it and see.

πŸ“ 3 scoops C&K clearly collagen
πŸ“ 4 eggs
πŸ“ 1/3 cup coconut oil
πŸ“ 2 cups super-fine almond flour
πŸ“ 1/2 cup tapioca flour
πŸ“ 1/3 cup maple syrup
πŸ“ 1 tsp vanilla extract
πŸ“ 1/2 tsp ground cinnamon
πŸ“ 1.5 tsp baking powder
πŸ“ 3/4 tsp salt


πŸ“ 1 cup chopped raw pecans
πŸ“ 2 tbsp brown coconut sugar (or coconut sugar, or raw cane sugar)
πŸ“ 3 tbsp coconut oil
πŸ“ 2 tsp ground cinnamon
πŸ“ pinch of salt


Preheat oven to 350 degrees and line your 8x8 or 9x9 baking pan with parchment.

STEP 1: Infuse your coconut oil with your coffee beans for coffee flavor in the cake. WHAT? In a pan, melt your coconut oil. You'll need to account for oil lost from sticking to the beans so melt about 1/4 cup extra. Once the oil is melted, add your beans to the pot and let it simmer for 5 minutes. Remove from heat and cover for 15 minutes before straining the coconut oil into a bowl. Dispose of beans.

STEP 2: FOR THE CAKE: In a bowl, whisk together 1/3 cup coffee-infused coconut oil (cooled), eggs, vanilla extract and maple syrup. In another bowl, stir together the almond flour, tapioca flour, clearly collagen, ground cinnamon, baking powder and sea salt. Then, add the dry ingredients to the wet ingredients and mix until completely combined.

STEP 3: FOR THE TOPPING: In a separate bowl, mix together the ingredients for the topping until completely combined.

STEP 4: Pour half of your batter into your baking pan and smooth evenly. Cover with half of the cinnamon pecan topping and swirl around gently. Add your remaining batter on top, smooth evenly, and cover with the rest of your topping mixture.

STEP 5: Bake for 30 minutes. Your cake should be golden and set. Turn off your oven and leave it shut for another 5 minutes with the cake inside before you take it out to let it cool.
