C&K SUGAR FREE BLUEBERRY COBBLER BARS

So, besides the fact that they're stupid good, these guys are gluten free, dairy free AND refined sugar free. These blueberry cobbler bars are as good as the unforgettable blueberry pie you ate at a diner one time. Only this time, you made them, and you can whip them up again any time you want in 10 minutes. Pair your slice with a scoop or two of this fat free protein vanilla ice cream: welcome to heaven.

MACROS: 180 cal | 16g carbs, 12g fats, 5g protein

INGREDIENTS

For the base:

📍 2 scoops Clearly Collagen (optional for protein boost--omit for vegan)
📍 1 cup oat flour
📍 1/2 cup almond flour
📍 1 tsp vanilla extract
📍 1/2 tsp cinnamon
📍 1/2 tsp salt
📍 1/4 cup melted coconut oil
📍 1/4 cup sugar free maple syrup (can use regular maple syrup but will affect macros)

For the filling:

📍 2.5 cups fresh or frozen blueberries
📍 3 tbsp coconut sugar
📍 1 tsp tapioca starch or cornstarch
📍 1 scoop vanilla Clearly Caffeine
📍 1 tbsp lemon juice

For the crumble topping:

📍 2/3 cup rolled oats
📍 2 tbsp almond flour
📍 1/4 cup finely chopped walnuts
📍 1 tsp cinnamon
📍 1/3 cup sugar free maple syrup (can use regular if preferred)
📍 2 tbsp melted coconut oil

DIRECTIONS

STEP 1: Preheat oven to 350 and line your 8x8" baking tin with parchment paper. Pro tip: when you line the bottom, fold two sides of your paper in and leave two sides long so you have handles to pull your cobbler out when it's done.

STEP 2: Mix all the ingredients for the base and press it evenly in the bottom of your baking tin.

 


STEP 3: Toss the blueberries with the other filling ingredients and cover the base.


STEP 4: Mix all the ingredients for your crumble and "crumble" clumps across your tin over the filling. The coconut oil will make this niiiiice and crunchy 👌


STEP 5: Pop it in the oven and let it bake for 35-45 minutes, until the top looks golden brown and you see the filling bubbling.
